Homemade Oreo Cakesters

Earlier this evening, I caught a bit of a baking buzz and took stock of my baking cupboard. 2 things caught my eye - a tub of leftover whipped vanilla icing from Baby Bear's birthday cakes, and a box of fudge brownie mix.

Now I've never bought them but I have eaten one before, and they were the first things that popped into my head when I saw those 2 ingredients.

Oreo Cakesters:



These snack cakes are basically cake like cookies stuck together with whipped filling, in either vanilla or peanut butter. Apparently, Nilla Cakesters are hitting the markets soon, too.

I hunted around the interweb looking for a method to make brownie mix into cookies and using a few different resources, came up with this recipe:

Fudge Brownie Cookies

1 box (425g) fudge brownie mix
1/3 cup vegetable oil
1 egg
2 tbsp water
1 cup or so chocolate chips

Preheat oven to 375.

Mix all ingredients except for chocolate chips. Fold in chips after mixture is blended.

Drop by uniform teaspoons onto parchment lined baking sheet and bake for 7 to 8 minutes. Allow to cool on sheet for about 5 minutes, then cool completely on rack.

Whipped Vanilla Filling

1 tub, 3/4 full Betty Crocker Whipped Vanilla Frosting

Assembly:

Using a regular table knife, spread a liberal amount of frosting onto the underside of 1 cookie. Find another cookie similar in size and shape and press gently onto frosting, bottom side down. Wiggle slightly to set. Continue until all cookies are used.

Store in refrigerator overnight to allow frosting to firm slightly, but allow to sit at room temperature for about 10 minutes before eating.

Makes approximately 18 Cakesters...depending on how many you have to taste test.



They turned out great, considering I flew by the seat of my pants, for the most part. The cookies look more crispy than chewy, but don't be fooled - the cookies are very soft and moist, bite into them gently so as to keep the filling inside, and not all over your fingers!

How is this "homemade" if it's made from Brownie Mix and prefab frosting-in-a-can? Why is this worth the trouble of making, as opposed to just buying the Oreo Cakesters? I don't see a benefit for taste or nutritional value.

Anonymous - I love how when it's a negative comment, people always go Anonymous to avoid repercussion on their own blog. Funny!

In response to your comment - homemade = made at home as opposed to going out and buying them. It was late at night, I felt like baking, this is what I had available to me, so I created something out of what I had.

And they're really great - the boys at Papa Bear's work were fighting over them today! :)

Just wanted to say Hi and let you know I made this version of oreo cakesters. They turned out really good. I left out the chocolate chips. My kids absolutely loved them.
