Speedy Triple Decker Clubs
Last night we had something perfect for a warm nearly summer evening - Club Sandwiches! I found the recipe in my Summer '08 edition of Kraft Foods magazine.
Speedy Triple Decker Club
2 tbsp Miracle Whip
6 slices whole wheat bread, toasted
8 slices shaved rotisserie chicken
4 slices bacon, cooked crisply
1 tomato cut into 4 slices
2 lettuce leaves or 1 cup shredded lettuce
Spread 1 tbsp Miracle Whip onto 2 of the toast slices, top each with 4 slices shaved chicken. Cover each with another toast slice. Cover with bacon, tomato slices and lettuce, divided evenly. Spread remaining 1 tbsp Miracle Whip between last 2 toast slices and top sandwiches. Cut into 4 and serve.
Serves 2, 1 sandwich each.
I had thrown 2 bottles of Boylan's Birch Beer soda into the freezer to chill and we had those with our dinner as well as water with lemon slices. Papa Bear claimed it to be the perfect warm night dinner and that it was a keeper!
Tonight we're having BBQ'd hamburgers...we were supposed to have a Jamie Oliver pasta recipe but because we're having a heat wave in our town this weekend, we're going to make the most of it and do as much BBQ'ing as possible! We had both chipped in $25 to buy a propane BBQ this past payday so we tried that out with the burgers and it worked great!
Some exciting news - I sold something on craigslist today...
...it means that my credit card will get completely paid off.

Whatever you sold, good for you!! Putting the money towards bills is hard, takes determination. Way to go! Mac and I are such spenders, we have a hard time paying down debt. We need to be more focussed, but it takes work.
Nice looking club sandwiches too, just the thing for this weather. We had BBQ pizza tonight, to keep the house from heating up even more. How's your new BBQ? Mary-Anne

I also made clubs b/c of the recipe in the Kraft mag...I used turkey & ham instead of the chicken though and they were yummy! I'll have to try the chicken next time.
