BBQ Beef Cups
Oy - I've had a pretty bad headache all day today and have just tried my usual cocktail of Ibuprofen 400 plus an Extra Strength Tylenol in the hopes of getting rid of it.
We're supposed to be having this for dinner tomorrow night but seeing as I didn't have anything planned for tonight, with my headache I didn't feel like being overly creative so I bumped it up to tonight.
BBQ Beef Cups
3/4 lb ground beef
1/2 cup BBQ sauce
1 tablespoon brown sugar
1 can refrigerated biscuits (Pillsbury)
shredded cheddar cheese
1 small onion, diced
Preheat oven to 400. In a skillet, brown the beef over medium heat. Season with salt and pepper if desired. Remove from heat and stir in the BBQ sauce and brown sugar. Spray a muffin tin with non stick spray and place each biscuit in a muffin spot. Press the biscuit dough down and up the sides to form a cup. Divide the beef mixture among the cups and sprinkle with a bit of the shredded cheddar. Bake until golden and biscuits are cooked, about 10-12 minutes. Serve with raw diced onion.
I love these so much - they are filling and super tasty, quick and easy! We had these with salad and some mixed veggies.
I apologize for my lack of creativity today...I'm taking a 'sick' day.
